Apple Cinnamon Scones

Good Post Christmas Morning! I hope you all had a wonderful, blessed Christmas yesterday! I know we sure did! Now comes the fun part, putting together mountains of toys, finding a home for the old ones and picking up paper… lots and lots of paper! I’m going to need a good breakfast to do all of that! That’s why I’m giving you this recipe today! These simple, yet delicious scones are perfect! Apples and cinnamon just go together and when you add them to a scone it’s magical! They really don’t take too long to make and you could even start the dough the night before and bake the morning of serving. Makes 8 scones.


1 cup white rice flour
¼ cup coconut flour
¼ cup almond flour
½ cup tapioca starch
2 tsp xanthan gum
1 tsp baking powder
1 tsp sea salt
½ tsp baking soda
1 tsp vanilla
¼ cup coconut oil, softened
½ cup almond milk
1 egg
1 cup apple, finely chopped
1 Tbsp cinnamon
¼ cup coconut sugar
Glaze
1 Tbsp butter, melted (I used dairy free)
1 cup powdered sugar
2 Tbsp almond milk (more or less for desired consistency)


  • In a large mixing bowl, combine dry ingredients. Add in oil, milk, vanilla and egg. Blend over low speed until dough ball forms. Slowly add in apple pieces until well combined. 
  • On a floured surface (or a counter with a layer of plastic wrap), form dough into a circle about 1” thick. Cut the circle into 8 pieces. 
  • Place scones onto a greased baking sheet and bake at 325°F for about 20-25 minutes or until scones are lightly browned and cooked through. Let cool for about 10 minutes. 
  • While scones are baking, combine glaze ingredients into a small bowl. Whisk together until smooth, adding more milk if a runnier glaze is desired. Drizzle glaze over cooled scones and serve.

Upside Down Apple Cake


I LOVE pineapple upside down cake. It is our go-to spring dessert. However, it’s not spring, so pineapple doesn’t sound right. How about apple?! It sounds perfect! This cake smells amazing and tastes even better. It has the perfect amount of sweet with a little bit of tartness from the apples. Plus it is gluten free and dairy free!


3/4 cup rice flour
¼ cup sweet sorghum flour
¾ cup potato starch
½ cup tapioca starch
½ cup applesauce
¼ cup olive oil
1 tsp baking powder
1 cup stevia or sugar
1 tsp baking soda
½ tsp salt
2 tsp vanilla
1 tsp xanthan gum
3 eggs
1 cup almond milk
1 apple, peeled, cored and thinly sliced
1 tbsp apple juice
¼ cup coconut sugar or brown sugar
  • In a 9x9 greased pan, place apple slices in a single layer. Sprinkle coconut/brown sugar over apple slices. Pour apple juice over fruit.
  • In a large mixing bowl, combine remaining ingredients and mix on medium speed for about 3 minutes. Pour batter over apples in baking pan.
  • Bake at 350°F for about 35 minutes or until cake is cooked through (knife inserted comes out clean). Let cool for about 10 minutes. If desired, flip cake onto serving platter to show apple detail.

Strawberry-Rhubarb-Apple Crisp


My husband is a sucker for apple crisp and we love anything with rhubarb. I planted some rhubarb this year and had just enough to make this crisp. The fruit can easily be substituted for whatever you like: pears, peaches, any combination, etc. I’ve even added a pit of pineapple chunks to this to give it an extra flavor! This recipe is one of my go-to favorites because it is so easy and is such a good comfort food dessert.
Fruit Filling
2 cups of chopped fruit (we love strawberries, rhubarb and granny smith apples)
¼ to ½ cup of fruit juice or water (depending on how juicy you want it)
1 tsp cinnamon
1 Tbsp starch (corn or tapioca)
¼ cup maple syrup or honey
Topping
½ cup GF oats
¼ cup quinoa flakes (or omit – it just gives it a little extra texture)
¼ cup coconut flour
¼ cup GF all purpose flour (I like Bob’s Red Mill)
1 tsp cinnamon
½ tsp salt
¼ cup coconut oil
¼ cup brown sugar (or Stevia, or regular sugar)
·         Mix together the ingredients for the fruit filling.
·         Mix together the ingredients for the topping. It should resemble a course crumb texture.
·         Place topping mixture into a greased pie plate. Then sprinkle the crumb topping over the top of the fruit. Bake in a preheated oven at 350°F for 25 minutes or until bubbly and slightly brown on top.
