Seafood Chili

Okay, I know what you are thinking… seafood chili?? What?! Yes – don’t hate it until you try it. When I was throwing this together, I was seriously thinking “What on earth are you doing?! This is going to be awful!” but I still kept throwing things in the stockpot. Here’s what happened.. It was a cold, snowy Monday. My husband wanted chili – but I don’t eat beef. My turkey and chicken were frozen and it was “meatless Monday”. I had some tilapia and shrimp.. and some other stuff. I threw it together and surprisingly it worked! The paprika and chili powder give it a smoky flavor but the corn and edamame give it a little sweetness. Honestly, it is best served with some tortilla chips crumbled on top. It’s like a weird, tasty cross between a fish taco and chili. You just have to try it!

Mini Polenta Pizzas

These little pizzas are a favorite at our house. They are fun for the kids and really quick and easy to make. In addition, it is gluten-free and low-fat. Polenta is a perfect alternative for carb filled pizza crust. You can use homemade polenta or cheat a little and use pre-made. Either way this is an easy, filling and delicious recipe!


1 roll of polenta (or homemade cut into small slices)
¼ cup balsamic vinaigrette
½ cup mushrooms, diced
1 cup fresh spinach
1 tbsp olive oil
¼ tsp minced garlic
¼ tsp sea salt
¼ tsp black pepper
2 small tomatoes, sliced thin
Shredded cheese


  • In a large skillet, sauté mushrooms, spinach and garlic in olive oil until slightly tender. 
  • On a large greased cookie sheet, place thin slices of polenta (about ¼ in thick). 
  • Using a pastry brush, spread on balsamic vinaigrette over polenta slices. 
  • Top each slice with a little of the mushroom/spinach mixture. Then top each slice with a tomato slice and sprinkle with cheese. 
  • Bake at 375°F for about 15 minutes or until cheese is melted. I got one roll of polenta to make about 15 pizza slices.

Happy Monday All!

Just over a week until Christmas!!! Are you ready?! We are slowly getting there! This week we will be starting our holiday goodie baking and prep! We've finished the grocery shopping we could so we'd be able to avoid some crowds (hopefully!). Now we just have to make everything! We are in full swing of our 12 Days of Giving. It's proven to be a lot of work but worth it! We will be going to the homeless shelter, library, fire dept, etc to deliver our goodies! Here is this week's menu plan. Easy Breakfast Sandwich


Here’s our post wedding breakfast – and one of my son’s favorite! This is quick and easy enough for a weekday breakfast. You can also make these ahead of time and either freeze or refrigerate them. Much healthier than the store bought sandwiches or fast food! Makes 1 sandwich

1 breakfast roll (English muffin, biscuit or roll – I used a GF Against the Grain artisan roll)
1 egg
1 slice of cheese
1 thin slice of turkey or ham
  • Cut the breakfast roll in half and lightly toast each side. In a skillet, cook egg, breaking the yolk halfway through cooking.
  • Flip egg and cook the other side. You can also use a circular egg cooker (to make a perfect circle egg for your sandwich).
  • Warm the turkey or ham slices in the skillet also.
  • On one half of the toasted roll, place cheese slice, egg and meat slice. Top with other half of roll and serve.
